-1/2 cup flour

-1 tsp baking powder

-1 tsp salt

-1/4 tsp black pepper

-1 1/2 lb bluegill fillets, skinned and diced

-1/4 cup olive oil

-2 onions, chopped

-2 cloves garlic, minced

-1 can (14.5 oz) diced tomatoes, undrained

-1 can (3.8 oz) tomato paste

-1 tbsp jalapeño pepper sauce

-1 tbsp honey

Instructions:

Preheat oven to 350 degrees F. Grease a baking dish with olive oil. In a small bowl, mix together the flour, baking powder, salt and black pepper. Dredge the bluegill in the flour mixture until well coated. Place the bluegill fillets in the prepared dish. In a large skillet over medium heat, heat the olive oil until hot.
