-2 tablespoons butter or margarine

-1 cup milk

3. Remove from the heat and drain on paper towels.

6. Pour in the cornmeal and stir to combine. Cook for 2 minutes, or until well coated.

8. Place the bluegill fillets back into the skillet with the cornmeal mixture, stirring to combine

Oven Baked Bluegill Recipe


-1/2 cup flour

-1 tsp baking powder

-1 tsp salt

-1/4 tsp black pepper

-1 1/2 lb bluegill fillets, skinned and diced

-1/4 cup olive oil

-2 onions, chopped

-2 cloves garlic, minced

-1 can (14.5 oz) diced tomatoes, undrained

-1 can (3.8 oz) tomato paste

-1 tbsp jalapeño pepper sauce

-1 tbsp honey


Preheat oven to 350 degrees F. Grease a baking dish with olive oil. In a small bowl, mix together the flour, baking powder, salt and black pepper. Dredge the bluegill in the flour mixture until well coated. Place the bluegill fillets in the prepared dish. In a large skillet over medium heat, heat the olive oil until hot.

Add the onion and garlic and sauté until softened. Stir in the diced tomatoes and tomato paste and bring to a boil. Reduce the heat to low and simmer for 30 minutes. Stir in the jalapeño pepper sauce and honey. Bake for an additional 10 minutes or until heated through.

Grilled bluegill recipe


-1 bluegill

-1 tablespoon olive oil

-1 teaspoon paprika

-1 teaspoon smoked paprika

-1 teaspoon cumin

-1 teaspoon chili powder

-1/2 teaspoon garlic powder

-1/4 teaspoon salt

-4 cups chopped fresh tomatoes, about 10

-2 tablespoons tomato paste

-1 cup chicken broth or vegetable broth

-12 small fresh green onions, chopped


1. Preheat grill to medium heat.

2. Grill bluegill for 4 minutes per side or until cooked through.

3. In a bowl, mix together olive oil, paprika, smoked paprika, cumin, chili powder, garlic powder and salt. Add bluegill to the bowl and coat evenly with the mixture. Grill for an additional 5 minutes or until lightly browned.

4. Remove from grill and let cool slightly.

5. In a large saucepan, combine chopped tomatoes, tomato paste and chicken broth or vegetable broth; bring to a boil over high heat. Reduce heat to low and simmer for 30 minutes or until all ingredients are heated through.

6. Stir in green onions and serve immediately.
